Chai-Spiced Maple Loaf

A Story from the Mountains

Every fall, when pumpkin spice seems to take over every menu and kitchen, I find myself reaching for chai instead. The warmth of cardamom, cinnamon, and cloves instantly transports me back to my childhood home in the mountains. I remember crisp mornings when the fog would roll through the valleys, and my family would sip steaming cups of chai by the woodstove. While pumpkin spice is lovely, chai spices remind me of those quiet seasonal shifts—the crackle of leaves underfoot, the sharp chill in the air, and the comfort of home. That’s why this Chai-Spiced Maple Loaf has become my go-to fall bake: fragrant, moist, and perfectly nostalgic.





Ingredients

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 2 tsp ground cinnamon

  • 1 tsp ground cardamom

  • ½ tsp ground ginger

  • ½ tsp ground cloves

  • ¼ tsp ground nutmeg

  • ½ cup unsalted butter, melted and slightly cooled

  • ½ cup pure maple syrup

  • ½ cup brown sugar, packed

  • 2 large eggs

  • ½ cup whole milk (or almond milk)

  • 1 tsp vanilla extract

Optional Glaze:

  • ½ cup powdered sugar

  • 2 tbsp maple syrup

  • 1–2 tsp milk, as needed

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.

  3. In a large bowl, whisk butter, maple syrup, brown sugar, eggs, milk, and vanilla until smooth.

  4. Gently fold dry ingredients into the wet mixture until just combined. Do not overmix.

  5. Pour batter into prepared loaf pan and smooth the top.

  6. Bake 45–55 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool in the pan for 10 minutes, then transfer to a wire rack.

  8. For the glaze, whisk powdered sugar, maple syrup, and milk until smooth. Drizzle over cooled loaf.
